Our hickory cooking pieces are 8-11" long and 3-4" thick. The fibrous character of wood makes it an easy light, and it is nearly as dense as oak. It has all been kiln dried, eliminating any pests and bringing it to to 15% moisture, approximately what you'd find in naturally seasoned wood.
Hickory burns long with a medium heat, and shines when used under pork and the lighter meats.
